Parmesan-Crusted Chicken

Ingredients

  • 2 boneless, skinless chicken breasts (about 8 ounces each)

  • Kosher salt

  • Freshly ground black pepper

  • 1¼ cups panko breadcrumbs

  • ¾ cup freshly grated Parmesan cheese

  • 1 tablespoon chopped fresh parsley, plus more for garnish

  • 2 tablespoons extra-virgin olive oil

  • ¼ cup mayonnaise

  • Lemon wedges, for serving (optional)

Directions

1. Prepare the oven

Preheat oven to 425°F (220°C).

Line a sheet pan with parchment paper.

2. Prepare the chicken

Pat the chicken dry.

Slice each breast in half horizontally to make 4 thin cutlets.

Pound each cutlet to approximately ¼-inch thick.

Season both sides with salt and pepper.

3. Prepare the coating

In a shallow bowl combine:

  • Panko

  • Parmesan

  • Parsley

  • ½ teaspoon kosher salt

  • ½ teaspoon black pepper

Drizzle in the olive oil and toss until evenly combined.

4. Bread the chicken

Spread 1 tablespoon of mayonnaise over each cutlet.

Press each piece firmly into the breadcrumb mixture until completely coated.

Arrange on the prepared baking sheet.

5. Bake

Bake for 20–25 minutes, turning halfway through, until the coating is golden brown and the chicken is cooked through.

Finish with a light sprinkle of salt and fresh parsley.

Serve with lemon wedges, if desired.

This is one of those dinners that works with almost anything. Pair it with a fresh salad in the summer, roasted vegetables in the fall, or buttered noodles when little ones are around the table. Leftovers also make an excellent sandwich the next day.
