Peanut Butter Energy Balls
Makes: About 20 energy balls
Prep Time: 15 minutes (+ 30 minutes chilling)
Ingredients
1 cup creamy peanut butter
1¼ cups old-fashioned rolled oats
½ cup ground flaxseed
3 tablespoons pure maple syrup (or agave)
½ cup mini chocolate chips
Instructions
In a medium bowl, combine the peanut butter, oats, flaxseed, maple syrup, and chocolate chips. Stir until everything is evenly mixed.
Refrigerate the mixture for about 30 minutes. Chilling makes it much easier to roll.
Scoop about a tablespoon of the mixture and roll into 1-inch balls. If the mixture begins sticking to your hands, lightly dampen them with water.
Store in an airtight container in the refrigerator for up to one week.
Freezer Instructions
These freeze beautifully. Arrange the energy balls on a baking sheet until firm, then transfer them to a freezer-safe container or bag. They’ll keep for up to three months and thaw in just a few minutes.
Variations
Substitute almond butter for peanut butter.
Replace part of the flaxseed with chia or hemp seeds.
Add a teaspoon of vanilla extract.
Stir in shredded coconut, chopped nuts, dried cranberries, raisins, or a scoop of your favorite protein powder (add a little extra peanut butter or maple syrup if needed).
