Chicken Parmesan

Ingredients

  • 2 pounds boneless, skinless chicken cutlets (or turkey, pork cutlets, or chicken thighs)

  • ½ cup all-purpose flour

  • 3 large eggs, beaten

  • 2–3 cups panko breadcrumbs

  • Kosher salt

  • Freshly ground black pepper

  • Olive oil, for frying

  • 5 cups Simple Tomato Sauce

  • 1 cup finely grated Parmesan cheese

  • ½ pound fresh mozzarella, torn into bite-sized pieces

Directions

1. Prepare the chicken

Preheat the oven to 400°F (205°C).

Place the chicken between two sheets of parchment paper or plastic wrap. Pound to an even ¼-inch thickness.

2. Bread the chicken

Prepare three shallow bowls:

  • Flour

  • Beaten eggs

  • Panko breadcrumbs

Season the chicken generously with salt and pepper.

Coat each piece in flour, then egg, then breadcrumbs.

3. Fry

Heat about ½ inch of olive oil in a large skillet over medium-high heat.

Working in batches, fry the chicken until golden brown on both sides.

Transfer to a paper towel-lined plate.

4. Assemble

Spread a thin layer of tomato sauce in the bottom of a 9 × 13-inch baking dish.

Sprinkle with one-third of the Parmesan.

Layer:

  • Half of the chicken

  • Half of the mozzarella

  • Half of the remaining sauce

  • Another third of the Parmesan

Repeat the layers, finishing with the remaining sauce and Parmesan.

5. Bake

Bake for 40 minutes, until bubbling and lightly browned.

Let rest for 5–10 minutes before serving.
