½ cup all-purpose flour
3 large eggs, beaten
2–3 cups panko breadcrumbs
Kosher salt
Freshly ground black pepper
Olive oil, for frying
1 cup finely grated Parmesan cheese
½ pound fresh mozzarella, torn into bite-sized pieces

Working in batches, fry the chicken until golden brown on both sides.

Sprinkle with one-third of the Parmesan.

Repeat the layers, finishing with the remaining sauce and Parmesan.
